Add sweet potato; cover and cook 8 minutes, stirring occasionally. Add bell pepper and onion; cook, uncovered, 3 minutes, stirring occasionally. Add kale and Brussels sprouts; cook 3 minutes or until vegetables are golden brown, stirring occasionally. Add garlic, salt and black pepper; cook 1 minute or until fragrant, stirring frequently. Makes about 4 cups.<br \/>\n<\/span><\/p>\n<p><span class=\"recPrep\"><span>2.<\/span>In a separate large nonstick skillet, heat remaining \u00bd tablespoon oil over medium heat.
