Baked Cheesy Potatoes & Broccoli

Makes: 8 (1/2 cup) servings
1 tablespoon Weis Quality All-Purpose Flour
3/4cup Weis Quality Nonfat Milk
1/2cup Weis Quality Lowfat Cottage Cheese
1 tablespoon nutritional yeast (located in the natural foods aisle) or grated Parmesan cheese
1 teaspoon McCormick® Ground Mustard
Salt and pepper to taste
1 bag (20 ounces) refrigerated diced potatoes with onion (located near the meat department)
1 cup frozen Weis Quality Broccoli Florets, thawed, coarsely chopped
Nonstick cooking spray
1.Preheat oven to 350°. In a large skillet, heat oil over medium-high heat; add flour and cook 2 minutes, whisking constantly. Whisk in milk; cook 2 minutes or until mixture thickens, whisking frequently. Remove from heat; stir in cottage cheese, 2 teaspoons nutritional yeast (or Parmesan cheese), mustard, and salt and pepper to taste.
2.In a large bowl, toss potatoes, broccoli and cottage cheese mixture to combine. Spray 8-inch square baking dish with cooking spray; transfer potato mixture to prepared dish. Sprinkle with remaining 1 teaspoon nutritional yeast. Bake 45 minutes or until potatoes are tender.
