Grilled Yogurt-Harissa Chicken Wraps with Tomatoes, Garbanzo Beans & Avocado
Prep: 15 minutes plus marinating
Grill: 7 minutes • Makes: 4 (1 wrap) servings
1 tablespoon harissa seasoning
1 pound Weis Quality Chicken Tenderloins
4 (8-inch) Weis Quality Whole Wheat Flour Tortillas
1 avocado, pitted, peeled and chopped
1 green onion, sliced
1 cup Weis Quality Grape Tomatoes, halved
1 cup Weis Quality Baby Spinach, loosely packed
1/2 cup Weis Quality No Salt Added Garbanzo Beans, drained and rinsed
1/3 cup Weis Signature Collection Crumbled Feta Cheese
1.In small bowl, whisk yogurt and harissa seasoning. Place chicken and yogurt mixture in large zip-top plastic bag; seal bag, pressing out excess air and refrigerate at least 1 or up to 8 hours.
2.Prepare outdoor grill for direct grilling over medium-high heat. Remove chicken from marinade; discard marinade. Place chicken on hot grill rack; cover and cook 7 minutes or until internal temperature reaches 165°, turning once.
3.Fill tortillas with chicken, avocado, onion, tomatoes, spinach, beans and cheese.
