Grilled Everything-Spiced Stuffed Chicken

Prep: 15 minutes
Grill: 15 minutes • Makes: 4 servings

2 green onions, thinly sliced
1 cup thawed and squeezed dry frozen Weis Quality Chopped Spinach
1/2 cup Weis Quality Neufchâtel Cheese, softened
1/4 teaspoon Weis Quality Iodized Salt
4 boneless, skinless chicken breasts (about 6 ounces each)
2 tablespoons Weis Quality Olive Oil
1/4 cup Weis Quality Everything Seasoning

1.Prepare outdoor grill for direct grilling over medium-high heat. In medium bowl, stir green onions, spinach, cheese and salt. Makes about 1 cup.

2.With sharp knife, cut each chicken breast horizontally in half, but do not cut all the way through, leaving about 1/4-inch uncut; open chicken breasts and lay flat. Rub both sides of chicken with oil and sprinkle with seasoning; leaving about 1/2-inch border, divide spinach mixture over bottom halves. Fold chicken breasts to enclose spinach mixture.

3.Place chicken on hot grill rack; cover and cook 15 minutes or until internal temperature of chicken and spinach mixture reaches 165°, turning once.
