Spinach, Grape, Avocado and Bacon Salad

Makes: 4 servings

5 slices Weis Quality Lower Sodium Bacon
1 package (5 ounces) Weis Quality Baby Spinach
1 cup Chilean grapes, halved lengthwise
1/4medium red onion, very thinly sliced
1 ripe avocado, peeled, pitted and cubed
2/3 cup Weis Quality Chopped Pecans, toasted
1 teaspoon Weis Quality Dijon Mustard
3 tablespoons Weis Quality Balsamic Vinegar
1/4cup Weis Quality Extra Virgin Olive Oil
Salt + freshly ground black pepper to taste

1.Arrange bacon on a large baking sheet in a single layer and place in cold oven. Set oven to 350° and bake until crisp, approximately 20-25 minutes. Transfer cooked bacon to a paper towel-lined plate to soak up excess grease. Cool and tear bacon into pieces.

2.Arrange spinach, grapes, onion, avocado, pecans and bacon in a large salad bowl or serving dish.

3.In a small bowl, whisk Dijon mustard, balsamic vinegar, olive oil, salt and pepper until blended. Drizzle over salad and immediately serve.
