Ham & Egg Cups

8 slices (1/8-inch-thick) lower-sodium deli ham
3/4 cup Weis Signature Collection Crumbled Feta Cheese
1/2 cup Weis Quality Fresh Salsa plus additional for garnish (optional)
9 Weis Quality Large Eggs
1/4 tsp. Weis Quality Ground Black Pepper
1. Preheat oven to 350°; spray a standard muffin tin with nonstick cooking spray. Place 1 piece of ham in 8 muffin cups, pressing to form the ham into a cup; evenly divide cheese into the cups.
2. In a medium bowl, whisk eggs and pepper; stir in fresh salsa. Evenly divide egg mixture into the cups.
3. Bake for 22 minutes or until the eggs are set and internal temperature reaches 145°, covering with aluminum foil if edges of ham cups are browning too quickly. Use a fork to remove cups from tin; serve warm topped with fresh salsa, if desired.
