Cranberry-Orange Muffins

Weis Quality Nonstick Canola Oil Cooking Spray
1 cup Ocean Spray® Fresh Cranberries
1cup Weis Quality All-Purpose Flour
1/2cup Weis Quality Whole Wheat Flour
1/2cup Weis Quality Brown Sugar
1 tablespoon baking powder
1/4teaspoon Weis Quality Iodized Salt
1Weis Quality Large Egg
2/3cup Weis Quality 2% Milk
1/4cup Weis Quality Canola Oil
2teaspoons orange zest

1.Preheat oven to 375°; spray 12-cup standard muffin pan with cooking spray.

2.In a food processor, pulse cranberries until small pieces remain.

3.In a medium bowl, whisk flours, brown sugar, baking powder and salt. In a large bowl, whisk egg, milk and oil; stir in flour mixture until just combined. Fold in orange zest and cranberries; divide batter into prepared muffin pan.

4.Bake muffins 17 minutes or until toothpick inserted in center of muffins comes out clean; cool 10 minutes then transfer to wire rack to cool completely.
