Strawberry-Banana French Toast

Prep: 20 minutes plus cooling
Cook: 15 minutes • Makes: 4 (2 slices French toast, 6 tablespoons strawberry mixture) servings

1 pound strawberries, hulled and quartered
2 tablespoons fresh lemon juice
2 tablespoons Weis Quality Granulated Sugar
Weis Quality Canola Oil Cooking Spray
3 Weis Quality Large Eggs
1 medium banana, peeled and mashed plus additional banana slices for garnish (optional)
1 cup Weis Quality 2% Milk
1 teaspoon Weis Quality Pure Vanilla Extract
8 slices Weis Quality Wholesome Whole Grain 12 Grain Bread
Powdered sugar for garnish (optional)

1.In medium saucepan, heat strawberries, lemon juice, granulated sugar and 1/2 cup water to a simmer over medium heat; cook
15 minutes or until thickened and strawberries are tender, stirring occasionally. Cool slightly. Makes about 1-1/2 cups.

2.Preheat griddle or large nonstick skillet over medium-high heat; spray with cooking spray. In large bowl, whisk eggs, banana, milk and vanilla extract. Briefly soak bread slices in egg mixture and place on hot griddle; cook 5 minutes or until golden brown, turning once.

3.Serve French toast topped with strawberry mixture and banana slices dusted with powdered sugar, if desired.
