Lentil-Chicken Salad

Prep: 15 minutes • Makes: 4 (1-3/4 cups) servings

2 tablespoons Weis Quality Extra Virgin Olive Oil
1 tablespoon fresh lemon juice
2 teaspoons Weis Quality Dijon Mustard
1/2 (14-ounce) can cooked lentils, drained and rinsed
1 large carrot, finely chopped
1/2 English cucumber, finely chopped
2 cups shredded Weis2Go Rotisserie Chicken
1-1/2 tightly packed cups Weis Quality Baby Spinach
1/4 cup Weis Signature Collection Crumbled Feta Cheese plus additional for garnish (optional)
1/4 cup roasted and salted pepitas

1.In large bowl, whisk oil, lemon juice and mustard; add remaining ingredients and toss. Makes about 7 cups.

2.Serve salad garnished with cheese, if desired.
