Kale Salad with Chicken and Apple Sausage

Cook: 5 minutes • Makes: 4 (1-1/2 cups salad, about 1/3 cup sausage) servings

1 tablespoon Weis Quality Olive Oil
1 package (10 ounces) fully cooked Weis by Nature Apple & Gouda Chicken Sausage, sliced crosswise into 1/4-inch-thick pieces
1 green apple, quartered, cored and thinly sliced
6 cups packed Weis by Nature Baby Kale
1/3 cup apple cider vinaigrette
1/2 cup Weis Signature Collection Crumbled Feta Cheese
1/3 cup Weis Quality Chopped Pecans
1/4 cup dried cranberries

1. In large skillet, heat oil over medium-high heat. Add chicken sausage; cook 3 minutes or until browned, stirring frequently. Transfer to plate; cool. Makes about 1-3/4 cups.

2.In large bowl, toss apple, kale and vinaigrette; fold in cheese, pecans and cranberries. Makes about 6 cups.

3.Serve salad topped with sausage.
