Greek Chicken Gyro Bowl
Prep: 20 minutes plus standing
Makes: 4 (1 bowl) servings
1 cup dry pearled farro
1-1/2 cups shredded skinless Weis2Go Rotisserie Chicken breast meat
1/2 cup cucumber dill Greek yogurt dressing plus additional for garnish (optional)
1 teaspoon Weis Quality Italian Seasoning
1 teaspoon salt-free lemon pepper seasoning
1 cup Weis By Nature Baby Spinach
1 cup halved grape tomatoes
1/2 cup thinly sliced English cucumber
1/4 cup crumbled reduced fat feta cheese
1/4 cup thinly sliced red onion
1-1/2 cups shredded skinless Weis2Go Rotisserie Chicken breast meat

1 cup Weis By Nature Baby Spinach

1.Prepare farro as label directs. Makes about 3 cups.
2.In a medium bowl, toss chicken, dressing, Italian seasoning and lemon pepper seasoning; let stand 10 minutes. Makes about 1-2/3 cups.
3. Divide farro into 4 bowls; top with spinach, tomatoes, cucumber, cheese, onion and chicken mixture. Drizzle bowls with additional dressing, if desired.
