Grilled Red Pepper & Garbanzo Bean Salad

2 tablespoons Weis Quality 100% Extra Virgin Olive Oil, divided
1 can (15 ounces) Weis Quality No Salt Added Garbanzo Beans, drained and rinsed
1 cup coarsely chopped fresh mint
1/2 cup Weis Signature Crumbled Feta Cheese
1 tablespoon fresh lemon juice
1/2 teaspoon Weis Quality Iodized Salt
1/2 teaspoon Weis Quality Ground Black Pepper
1/2 teaspoon Weis Quality Ground Cumin
1.Prepare outdoor grill for direct grilling over medium-high heat. In medium bowl, toss bell peppers and 1 tablespoon oil; place on hot grill rack. Cover and cook bell peppers 8 minutes or until lightly charred, turning once; transfer to cutting board. Cool bell peppers slightly; cut into 1-inch squares.
2.In medium bowl, toss garbanzo beans, mint, cheese, lemon juice, salt, black pepper, cumin, bell peppers and remaining 1 tablespoon oil. Makes about 3 cups.
